Kai Premium TDM Kiritsuke "The Lucky Number" 15cm blade and matte handle
The core of the Shun Premier blade is made of extremely hard VG Max steel and is covered by 32 layers of Damascus steel. This combination of different types of steel makes the cutting edge hard and elastic at the same time. The double-sided ground blade is comfortable to handle due to its low weight and guarantees a clean and precise cut. The applied hammer finish –
known in Japan as Tsuchime – not only has aesthetic reasons, but also makes it easier to release the cut material from the blade thanks to the small air cushions that are created.
Thanks to its symmetrical shape, the handle is suitable for both left- and right-handed people. A continuous tang ensures stability and balance when cutting. As a special detail, the end of the handle is engraved with the Tim Mälzer bull's head, the trademark of the professional chef.

And since this number represents luck in the home country of the Japanese cutlery manufacturer, the unusual anniversary is being duly honored with a product highlight for the joint Shun Premier Tim Mälzer series. The anniversary knife with the "Kiritsuke" blade shape and a length of 15 cm has a matte handle that is unique to the Shun Premier series. In addition, each knife bears an exclusive "13 - The Lucky Edition" logo and is provided with an engraved serial number on the bolster of the handle. It is already clear that this edition will remain a special and certainly sought-after unique piece from KAI for all time.
