KAI chef's knife Premium Series Limited Edition 2025

The core of the Shun Premier blade is made of extremely hard VG MAX steel and encased in 32 layers of Damascus steel. This combination of different steel types makes the edge both hard and resilient. The double-edged blade is lightweight, making it comfortable to handle and guaranteeing a clean and precise cut. The hammer-finish finish—known in Japan as Tsuchime—is not only aesthetically pleasing, but also facilitates the release of the cut material from the blade thanks to the small air pockets created.

Thanks to its symmetrical shape, the handle is suitable for both left- and right-handed users. A full-length tang ensures stability and balance when cutting. As a special detail, the end of the handle is engraved with Tim Mälzer's bull's head, the professional chef's trademark.
