The Shun Premier Tim Mälzer series has been specially tailored to the needs and demands of professional chefs. This premium series combines the high-quality material properties of the well-known Shun Classic series with a completely new, impressive overall look. The blade is divided into three different textures: A hammer finish known as Tsuchime has been incorporated from the spine of the blade to the middle of the blade.

The core of the Shun Premier blade is made of extremely hard VG Max steel and is covered in 32 layers of Damascus steel. This combination of different types of steel makes the cutting edge hard and elastic at the same time. The blade, which is sharpened on both sides, is comfortable to use thanks to its low weight and guarantees a clean and precise cut.

The hammered surface used - known in Japan as Tsuchime - is not only for aesthetic reasons, but also makes it easier to remove the cuttings from the blade thanks to the small air cushions created.

Handle

The elaborately crafted blade was combined with a medium brown, grained Pakka wood handle. Thanks to its symmetrical shape, the handle is suitable for both left- and right-handed users. A full-length tang ensures stability and balance when cutting. As a special detail, the end of the handle was engraved with the Tim Mälzer bull's head, the trademark of the professional chef.
