Kai Shun Classic DM-0700 office knife 9cm
Description
DM-0700
Blade 9 cm, handle 10.4 cm
The Shun Classic series combines centuries-old Japanese samurai blacksmithing with modern and technically sophisticated manufacturing processes of our time. The result is an extremely high-quality damask knife series that has been refined down to the smallest detail and consistently aimed at consistent sharpness. The knives are therefore ideal for professional use. The Shun Classic blades are beautiful to look at because of their characteristic, satin-matt pattern of the Damascus steel composite made up of 32 layers. In combination with the elegant, slim, tapered handle made of black Pakka wood, the result is an overall aesthetic concept with fundamental demands on quality and function.
blade
VG MAX steel with a hardness of 61 (±1) HRC forms the core of the entire blade up to the cutting edge. Covered by 32 layers of Damascus steel, the knife gets its incomparable anatomy with a stable blade that is hard and elastic at the same time thanks to the two components.
The Shun Classic blades have a double-sided grind.
Handle
The slim handle made of durable Pakka wood has a traditional Japanese chestnut shape. High-quality resins added to the wood make the material particularly resilient and moisture-resistant. Its typical chestnut shape ensures a comfortable and secure grip when cutting thanks to a slight edge on the right side. The continuous tang ensures stability and balance.
