KitchenAid Recipe: Healthy start to the new year!

After the holidays, light food is beneficial for our body.


Strengthen your immune system with a good portion of vitamins! How about an energizing juice or a winter salad with seasonal vegetables enriched with citrus fruits that give it freshness and zest?

Beetroot salad with orange and walnut

For 4 – 6 servings

Ingredients:
2 large beets
2 oranges, filleted
150g crumbled Gorgonzola
120g chopped walnuts, toasted
2 tablespoons basil
SALAD DRESSING:
1 tbsp orange juice
1 tbsp red wine vinegar
1/2 tsp salt
1/4 tsp pepper
3 tbsp olive oil

Attach the spiralizer with the medium spiral knife and peeling knife to the food processor. Process the beetroot at speed level 6. Cut spirals to desired length.
Place the beetroot spirals in a bowl of cold water. Allow to soak for 30 minutes
Change the water 2 to 3 times to allow the beetroot to 'bleed'. This means that the remaining ingredients will not be colored later by the beetroot juice. Drain the beets and place them in a large bowl.
For the salad dressing, place the orange juice, vinegar, salt and pepper in a small bowl and mix with the olive oil. Set aside.
Pour half of the dressing onto the beetroot. Add the orange fillets, gorgonzola, walnuts and half of the basil. Mix gently. Add more dressing if necessary.
Sprinkle with remaining basil.
Divide the salad evenly between 4 to 6 plates and serve.

For 2 people

Preparation time: 5 min

Ingredients:
2 apples
2 oranges
2 carrots
5 cm fresh ginger

Wash fruit, carrots and ginger. Quarter and core the apples. Peel and quarter the oranges. Chop the carrots and peel the ginger.
Process all ingredients in the juicer using the finest sieve. Mix well and enjoy.

green smoothie

For 2 people

Preparation time: 5 min

Ingredients:
1/2 cucumber
1 small bulb of fennel
2 leaves of kale
2 green apples
1/2 lemon

Wash the fruit and vegetables. Cut off the ends of the cucumber and divide into 4 pieces. Roughly dice the fennel. Cut the kale leaves into 3 - 4 pieces. Quarter and core the apples. Peel the lemon with a knife.
Process all ingredients in the juicer using the finest sieve. Mix well and enjoy.
